Ingredients:
7g sachet dry yeast or 15g fresh yeast, 500g strong white bread flour, plus extra for dusting, 2 tsp salt, 1 tsp sugar, 2 tbsp olive oil (plain or flavoured)
Method:
Mix all ingredients together (if using fresh yeast, crumble and rub into the flour). Measure 100ml of boiling water and top up to 300ml with cold water. Make a well in the centre and add the oil and water. Mix quickly with hands or wooden spatula to make a soft sticky dough. Sprinkle work surface with flour and tip out the dough. Knead until smooth and put back into mixing bowl, cover with tea towel and leave to rest for 1 hour (no need to find a warm place). After 1 hour, tip onto floured surface, knead to remove air bubbles and add other flavourings if you wish. Shape into a round, place in pot and slash top with a knife. Cover and rise for 30 min. Bake for 30 mins.
